After commuting over an hour for work each day I would go home tired and worn out. Cooking a gourmet meal for myself was out of the question. Since my New Year’s Resolution was to start eating healthier I had to figure out how to cook healthy meals that would fill me up and didn’t take too long to prepare. I remembered when I was little, my grandmother used to make quick sauteed seafood dishes. I decided to expand on her dish and incorporate chicken. Check out my 30-minute sauteed Chicken and Shrimp Dish!
Ingredients
2 Chicken cutlets
1/2 cup of Shrimp
1 cup of diced peppers and onions combined
1 can of pre-made string beans
1 bag of SUCCESS boil-in-bag rice
2 tablespoons of Olive Oil
Salt, pepper, and cayenne pepper (choose an amount to your liking)
Cooking the meal:
1) Chop peppers and onions (Prep time: 4 minutes)
2) Cover 2 tablespoons of Olive oil, Chicken cutlets, and shrimp in a frying pan or wok pot for 8 minutes on medium-high heat.
3) After 8 minutes, add seasoning and diced peppers/onions in pot. Let simmer for about 5 minutes.
4) Cook whole-grain rice. SUCCESS Whole Grain Boil-in-Bag rice allows you to make rice in 10 minutes. Put the bag of rice in a regular sized cooking pot with 8 cups of water on high heat. After 10 minutes, pour the water out of the pot and open the bag of rice.
5) Put can of string beans into a small pot and bring to boil. Let simmer for 3 minutes.
6) Take food out of all pots, pile on to plate, and you’re ready to eat!
Adding assorted peppers makes for more of an appealing dish.
